I am devoting the next 5 days to posting goodies that I made for my sister-in-law who threw a baby shower this past weekend. These are strawberry cheesecake bites using a mini cupcake pan. I prefer to call them "bites" as opposed to "mini" because some people think of the cupcake size version when thinking of "mini".

Here are 2 dozen of the bites. I ended up making 4 dozen and left 10 or so without strawberries in case of any allergies or any dislikes to strawberries. I used fresh strawberries with some strawberry preserves for the topping. I'm not a fan of canned fruit topping.
